Nimbusden is a twenty-seat café with a 5 kg drum roaster behind a glass wall. We keep the list short on purpose: two espressos, two filters, and whatever the kitchen has baked that morning.
No music louder than the grinder, no laptops after noon on Saturdays, and a jug of tap water on every table without asking. If you are new to the street, we are the narrow brick front between the bike shop and the launderette.

Retail bags of 250 g, roasted the same week you buy them, with the harvest year and the roast date stamped on the side rather than a vague "best before".
A 5 kg drum, a cooling tray and a chalkboard of roast curves. Stand and watch as long as you like; on Thursday afternoons we open the roastery door properly.

Nimbusden began in 2016 as a Saturday stall under the awning of a hardware shop two streets away, selling coffee we had roasted on a borrowed sample machine. The stall paid for a second-hand drum roaster in 2018, the drum roaster paid for the lease on Sint-Amandstraat in 2020, and the lease has been paying for itself ever since — narrowly, and only because our neighbours keep coming back.
We buy small: one or two pallets a year, mostly through two importers in Antwerp and Trieste who will tell us the farm-gate price without being asked three times. When a lot runs out we say so on the chalkboard rather than quietly substituting something else.
